Ingredients

Mini Cakes:

  • 1 3/4 cups cake flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/4 cup grapefruit juice, freshly squeezed
  • 2 grapefruit, zested and segmented, segments chopped fine
  • 1/3 cup plain yogurt
  • 3 large eggs
  • 2/3 cup extra-virgin olive oil

Glaze:

  • 1 cup confectioners’ sugar
  • 2 tablespoons grapefruit juice, freshly squeezed
  • Zest of 1 grapefruit

Instructions

  1. Preheat oven to 350 degrees F (175 C).
  2. Thoroughly grease a mini cake pan with cooking spray and place the mini pans onto a cookie sheet for easier handling.
  3. In a medium bowl, whisk together all the dry ingredients: cake flour, baking powder, baking soda, salt, and granulated sugar. Set this mixture aside.
  4. In a separate medium bowl, whisk together the wet ingredients until well combined: the remaining granulated sugar, grapefruit juice, plain yogurt, large eggs, and extra virgin olive oil.
  5. Create a well in the center of your dry ingredients, then gently pour the wet ingredients into this well. Whisk carefully until just combined, being careful not to overmix.
