Ingredients
- 2 1/4 cups All Purpose Flour
- 1/3 cup granulated Sugar
- 2 tablespoons poppy seeds
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted and cooled
- 5.30 fluid ounces Greek Nonfat Yogurt
- 1 teaspoon Vanilla extract
- 2 large eggs
- Juice and zest of 2 lemons
- Juice and zest of 1 orange
- Granulated sugar for sprinkling, if desired
Instructions
- Preheat oven to 350 degrees F (175 degrees C) and place muffin liners into your muffin pan.
- Into a large bowl, combine flour, sugar, poppy seeds, baking powder, baking soda and salt. Whisk until well combined.
- Into a medium bowl, combine melted butter, yogurt, vanilla extract, eggs, lemon and orange juice, and their zests. Whisk until smooth.
- Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix gently until just combined, being careful not to overmix. Overmixing can lead to tough muffins.
- Using a scoop (a 1/4-cup scoop works well), scoop batter evenly into each muffin well. Sprinkle with additional granulated sugar, if desired, for a sweet, sparkling top.
- Bake for 13-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool slightly before serving.
