Ingredients

Mango Jalapeno Compound Butter

  • 1/2 cup unsalted butter, softened
  • 1 mango, peeled and diced
  • 1 jalapeno pepper, seeded and diced
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon salt

Mushroom Peppercorn Compound Butter

  • 1/2 cup unsalted butter, softened
  • 1/2 ounce mushrooms, finely chopped (I used portabella)
  • 1 tablespoon freshly cracked pepper
  • 1/2 teaspoon salt

Gorgonzola Scallion Compound Butter

  • 1/2 cup unsalted butter, softened
  • 4 ounces gorgonzola cheese, crumbled
  • 2 tablespoons scallions, finely diced
  • 1 teaspoon freshly ground black pepper

NY Strip Steaks

  • 4 (6oz) USDA Prime NY Strip Steak
  • 4 teaspoons The Fresh Market Signature Spice Rub and Marinade

Instructions

Mango Jalapeno Compound Butter

  1. Place mango into a food processor until very finely diced, almost to a puree. Place mango in a bowl with softened butter, diced jalapeno, chopped cilantro, and salt. Mix thoroughly to combine. Scoop the mixture onto a piece of plastic wrap and roll it into a log shape. Place the log into the refrigerator to chill and firm up for at least 2 hours.

Mushroom Peppercorn Compound Butter

  1. Place mushrooms into a food processor and pulse until very finely diced. Transfer the diced mushrooms to a bowl with softened butter, freshly cracked pepper, and salt. Mix thoroughly to combine all ingredients. Scoop the mixture onto a piece of plastic wrap and roll into a log. Place the log into the refrigerator to chill for at least 2 hours.

Gorgonzola Scallion Compound Butter

  1. In a bowl, combine softened butter, crumbled gorgonzola cheese, finely diced scallions, and freshly ground black pepper. Mix thoroughly until all ingredients are well incorporated. Transfer the mixture onto a piece of plastic wrap and roll it into a firm log. Place the log into the refrigerator to chill for at least 2 hours.

NY Strip Steaks

  1. Remove steaks from the refrigerator about 30-60 minutes before cooking to allow them to come to room temperature. Rub 1 teaspoon of The Fresh Market Signature Spice Rub evenly over all sides of each steak.
  2. Prepare your grill for direct, high heat. Once hot, place the seasoned steaks onto the grill grate. Close the lid and cook until the bottom is beautifully browned and a crust has formed, typically about 3-4 minutes. Flip the steaks and cook for an additional 3-4 minutes, or until desired doneness is reached (refer to the doneness chart below). Remove steaks from the grill and allow them to rest on a cutting board for 5-10 minutes.
