This Epic Reuben Sandwich features layers of tender corned beef, tangy sauerkraut, sharp and creamy fontina and Russian dressing, grilled between slices of seeded rye bread.  The only Reuben Sandwich recipe you’ll ever need!

Ingredients

Sauerkraut recipe

  • 1 1/2 cups sauerkraut
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar

Epic Reuben Sandwich

  • 12 slices Rye bread (I used Seeded Hearty Rye)
  • Thousand Island Dressing (recipe below)
  • 6 slices fontina cheese
  • Sauerkraut (recipe above)
  • 1- 3 1/2 lb corned beef, brined and cooked in slow cooker for 10 hours, on low (recipe here Corned Beef)
  • butter or margarine, softened

Thousand Island Dressing

  • 3/4 cup mayonnaise
  • 1/4 cup ketchup
  • 3 tablespoons pickle relish
  • 1 tablespoons prepared horseradish
  • 1 teaspoon red wine vinegar
  • salt and fresh cracker pepper

Instructions

  1. Into a small saucepot, set over medium low heat, add sauerkraut, brown sugar and apple cider vinegar.  Simmer for 30 minutes, allowing the flavors to meld and the sauerkraut to caramelize slightly.
  2. In a medium bowl, thoroughly combine all ingredients for the Thousand Island dressing until smooth.
  3. To assemble each sandwich, spread about 1 tablespoon of Thousand Island dressing onto one side of each rye bread slice. Layer one slice of Fontina cheese, followed by approximately 1/4 cup of the prepared sauerkraut, and finally 1/4 cup of the sliced or shredded corned beef. Top with the remaining bread slice to form 6 sandwiches.
  4. Preheat a grill pan or large skillet to medium-high heat. Lightly butter the outer sides of each sandwich.
  5. Place sandwiches, butter-side down, into the preheated pan. Grill for approximately 2-3 minutes per side, or until the bread achieves a beautiful golden-brown crisp and the Fontina cheese is thoroughly melted and gooey. Serve immediately and enjoy the epic flavors!
