This Star Spangled Berry Sheet Pan Pie is an all-American dessert loaded with fresh berries, bright citrus flavors, and charming pie crust stars. It’s a delightful and easy addition to all your festive parties this year!
Ingredients
- 3 Pillsbury™ refrigerated pie crusts, at room temperature
- 1/4 cup sugar, divided
- 1 package cream cheese, softened to room temperature
- 2 containers (approx. 5.3 oz each) Greek Yogurt (lemon meringue flavor works wonderfully)
- 1 tablespoon fresh lemon juice
- Zest of 1 fresh lemon
- 6 cups assorted fresh berries (a mix of blueberries, cherries, raspberries, and strawberries is recommended)
Instructions
- Preheat your oven to 450 degrees Fahrenheit (230°C). Prepare your sheet pan.
- Carefully remove 2 of the refrigerated pie crusts from their packaging. Lightly flour a clean work surface and place the two pie crusts on top of each other. Roll them out together until they are large enough to fit your sheet pan (a typical size is 17 x 12 inches). Gently transfer the rolled crust into the pan, pressing it firmly into the corners and up the sides. Fold any excess edges over to create a slightly thicker crust border. Prick the bottom of the crust several times with a fork to prevent bubbling during baking.
- Bake the pie crust for 7-8 minutes, or until it turns a light golden brown. Once baked, remove it from the oven and allow it to cool completely on a wire rack for about 30 minutes. This cooling step is crucial for the crust to firm up before adding the filling.
- While the main crust cools, lightly flour your work surface again. Remove the remaining pie crust from its box. Roll it out slightly to make it easier to work with. Using various sizes of star-shaped cookie cutters, cut out patriotic stars from the dough. Arrange these star cutouts onto a separate cookie sheet. Lightly brush the stars with a little water and sprinkle them with 2 tablespoons of sugar. Bake these star cutouts in the oven for 4-5 minutes, or until they are golden brown and crisp. - In a medium-sized mixing bowl, beat together the softened cream cheese and the remaining sugar until smooth and creamy. Add in the fresh lemon juice and lemon zest, mixing well to combine all the bright flavors. Gently fold in the Greek yogurt until the mixture is uniform and airy.
- Once the main pie crust has cooled completely, spread the creamy yogurt and cream cheese mixture evenly over the bottom. Generously top this luscious layer with your assortment of fresh berries. Finally, artfully arrange the baked pie crust stars over the berries. Cut the sheet pan pie into 24 squares and serve immediately or chill until ready to serve.
