Speaking of traditions, securing the perfect Halloween costumes is always a top priority! This year, I was exceptionally organized, perhaps a little too eager. The moment I saw Target announce a one-day-only 40% off sale on costumes, I knew it was my chance. I dashed to the store with a singular, determined goal: to snag the last remaining costumes for my two children. You might say I resembled a slightly wild-eyed parent, perhaps even more so than usual, as I navigated the aisles with focused intensity. With only one of each of their desired outfits left, it was a race against time, but mission accomplished! I also wanted to secure them before our planned vacation, knowing full well that by the time we returned, the shelves would be bare. The only Halloween tradition I’ve happily retired, however, is dressing up myself – that particular hurrah concluded in my college days and shall forever remain there!

I carefully placed the candy eyeballs into the center of each sliced black olive. Once the Farm Rich breaded mushrooms emerged from the oven, golden and fragrant, and had cooled slightly to the touch, I gently tucked my prepared olive-and-candy-eyeball creations right into the breaded mushrooms. Eggs are baked in a tomato sauce and then breaded mushrooms with sliced black olives, made to looks like eyes, are nestled alongside to create this Halloween Eyeball Skillet. A festive meal sure to please the entire family!
Ingredients
- 1 package Farm Rich® Mushrooms
- 4 eggs
- 23 oz jar marinara or spaghetti sauce
- 8-12 sliced black olives
- 8-12 candy eyeball pieces
Instructions
- Preheat oven to 450° F
- Arrange mushrooms onto baking sheet
- Place your favorite marinara or spaghetti sauce into a cast iron skillet.
- Make 4 wells in the sauce and carefully crack an egg into each.
- Place both the mushrooms and eggs into the oven and bake for 13-14 minutes
- While the mushrooms and eggs are cooking, lay out as many black olive slices as you have prepared mushrooms.
- Into each slice black olive, place 1 candy eyeball.
- When the mushrooms come out of the oven and are cool to the touch, carefully remove a little piece of breading and place “eyeball” into each center.
- Arrange mushroom “eyeballs” around eggs.
