The classic shake you know and love, The Shamrock Shake, turned popsicle. Cool, creamy mint flavored frozen yogurt popsicles complete with whipped cream and a cherry on top!
Ingredients
- 12 Maraschino cherries, stems removed
- 1/2 cup heavy whipping cream
- 2 teaspoons powdered sugar
- 1/4 teaspoon vanilla extract
- 1 1/2 cups vanilla frozen yogurt, or ice cream
- 1 1/2 cups milk, I used nonfat
- 1/4 teaspoon peppermint extract
- 1/4 vanilla extract
- 6 drops green food color
Instructions
- Add 1 cherry to the bottom of each Popsicle well. Freeze for 30 minutes.
- In the bowl of your stand mixer, fitted with the whisk attachment*, add in your heavy whipping cream and whip until fluffy.
- Slowly add in your powdered sugar and vanilla.
- Place whipped cream into a piping bag and pipe into each well of the Popsicle mold making sure to add whipped cream to the sides of the cherry, about 1/4 way up.
- Place in the freezer to freeze for 1 hour.
- Add the remaining ingredients into your blender and blend until combined.
- Pour into each Popsicle mold, filling to the top.
- Place on the top of your Popsicle mold and place a Popsicle stick into each hole. Make sure you can feel the Popsicle pierce through the cherry but not all the way through.
- Pour into Popsicle molds and freeze until solid.
- To release Popsicle from mold, run under warm water for 15-30 seconds and they should slide right out.

*Make sure your whipping cream, metal bowl and whisk are very cold. Place your bowl and whisk attachment in the freezer for 10 to 15 minutes.
