- 6 medium-sized apples (such as Honeycrisp, Fuji, or Gala), cored
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, finely diced
- 1 medium carrot, finely diced
- 16 ounces ground sausage (turkey, pork, or plant-based)
- 1 teaspoon dried sage
- 1/4 teaspoon ground cinnamon
- 3/4 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper (freshly ground recommended)
- 1/2 cup apple cider
- 1/4 cup dried cranberries*
- 1 1/4 cups cooked brown rice
- 1 cup shredded sharp white cheddar cheese (or cheese of choice)
- Lemon juice, for brushing apples
Instructions
1. Preheat your oven to 350°F (175°C). Carefully hollow out the cored apples, leaving a sturdy wall and bottom. To prevent browning, brush the inside of each apple with a little lemon juice. Place the hollowed apples into a roasting pan.
2. Bake the apples in the preheated oven for 25 minutes to allow them to soften slightly before stuffing. This ensures they cook evenly with the filling.
3. While the apples are pre-baking, prepare the brown rice according to package directions. Set aside.
4. In a large skillet or sauté pan, heat the olive oil over medium heat. Add the minced garlic, diced onion, and diced carrots. Sauté for about 5 minutes, until the vegetables begin to soften and become fragrant.
