Sheet Pan Key Lime Pie is luscious, dreamy and a creamy classic made all on one sheet pan to feed a crowd!

Ingredients

  • 3 cups graham cracker crumbs, (about 2 1/2 packages)
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (14 oz cans) sweetened condensed milk
  • 2 large eggs
  • 2 tablespoons key lime zest
  • 1 1/4 cups (about 5 lbs worth) fresh key lime juice*
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • whipped topping, lime zest and lime slices for garnish, if desired

*Can’t find key limes? You can use regular limes.

Instructions

  1. Preheat oven to 350°F degrees. Coat a 15 x 10″ jelly roll pan with cooking spray.
  2. Process crackers in a food processor until fine crumbs form. Add in sugar and butter.
  3. Press crumb mixture into prepared jelly roll pan and bake for 8-10 minutes or until golden brown. Remove from oven and allow to cool.
  4. Into a large bowl whisk together sweetened condensed milk, eggs, lime zest, lime juice, vanilla and salt. Allow mixture to sit for 10 minutes to thicken.
  5. Pour into prepared pan and bake for 10 minutes or until just set.
  6. Cover with saran wrap and place into the refrigerator to firm up for at least 4 hours.
  7. Serve with whipped topping, a sprinkle of lime zest and lime slices, if desired.
