This Chorizo Queso Fundido is a rich, flavorful, and incredibly delicious dip featuring melted cheeses, savory chorizo, a hint of tequila, and the vibrant kick of El Yucateco® hot sauce. It’s the ultimate appetizer for game day and any festive gathering!

Ingredients

  • 12 ounces chorizo
  • 1/2 cup onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 3 garlic cloves, minced
  • 1/4 cup El Yucateco® Green Chile Habanero
  • 1/4 cup tequila
  • 7 ounces Chihuahua cheese, divided
  • 1/4 cup sharp cheddar cheese, shredded
  • 1/4 cup pepperjack cheese, shredded
  • 3 roma tomatoes, diced
  • 2 tablespoons cilantro, chopped
  • Corn chips, tortilla chips, or bread cubes for dipping

Instructions

  1. In a medium cast iron pan, cook chorizo over medium-high heat until thoroughly browned and crispy. Remove the cooked chorizo from the pan and place it onto a paper towel-lined plate to drain excess grease. Set aside.
  2. Using the pan drippings (add a tablespoon of oil if needed), sauté the diced onions, red bell pepper, yellow bell pepper, and minced garlic for approximately 3 minutes, until softened and aromatic. Return the cooked chorizo to the pan and stir to combine all ingredients.
  3. Remove the pan from the heat. Stir in the El Yucateco® Green Chile Habanero hot sauce and tequila. Place the pan back onto the burner and simmer for 2-3 minutes, allowing the sauce to slightly thicken.
  4. Add half of the Chihuahua cheese along with all of the sharp cheddar and pepperjack cheeses to the pan. Stir gently until the cheeses begin to melt and incorporate into the mixture.
  5. Evenly top the mixture with the remaining Chihuahua cheese.
  6. Preheat your broiler to high. Carefully place the pan under the broiler. Watch closely, broiling just until the cheese is fully melted, bubbly, and beautifully golden brown on top. This usually takes only a few minutes.
  7. Remove from the oven and garnish generously with diced Roma tomatoes and fresh chopped cilantro.
  8. Serve immediately with your choice of corn chips, tortilla chips, or bread cubes for dipping. Offer additional El Yucateco® hot sauce on the side for those who desire an extra kick of flavor.
