Ingredients
- 5 Ripe Bananas, smashed
- 4 ounces, Philadelphia Brown Sugar & Cinnamon Cream Cheese Spread
- 1 1/4 cup sugar, divided
- 1 egg yolk
- 2 cups + 1 Tablespoon, All Purpose flour
- 1 Tablespoon milk
- 1 1/2 baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoon apple pie spice
- 1/4 teaspoon salt
- 2 eggs, lightly beaten
- 1/2 cup vegetable oil
Instructions
- Preheat oven to 350 degrees and grease a loaf pan completely with cooking spray. Set aside
- In a medium bowl beat cream cheese and 1/4 cup sugar until combined. Beat in egg yolk, 1 tablespoon of flour and milk. Set aside.
- In a large bowl combine 2 cups flour, baking powder, baking soda, apple pie spices and salt and whisk to combine. Make a well in the center.
- In another large bowl, mix together the remaining 1 cup of sugar, 2 eggs and oil. Stir in smashed bananas.
- Pour wet batter into the well of the dry batter and stir until just combined.
- Spoon half of the batter, about 2 cups, into the bottom of the pan.
- Top with cream cheese mixture and use the back of a spoon to spread evenly.
- Dollop large spoonfuls of the remaining batter and spread evenly and gently so it doesn’t mix with the cream cheese.
- Bake for 45 minutes and then cover with aluminum foil to prevent browning. Place back into the oven for 15 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 20 minutes and then remove to wire rack to cool completely before slicing.
- *Can be refrigerated overnight so the cream cheese center really sets up. I had no problem slicing about an hour after removing from the oven.
