These delicious Everything Bagel Breakfast Pockets are filled with fluffy eggs, savory sausage, and rich Everything Bagel cheddar cheese, all baked inside flaky puff pastry. They are truly incredible and the perfect excuse to enjoy a fantastic morning meal!

Ingredients

  • 1 box (17.3oz) Puff Pastry Sheets, thawed
  • 16 ounces breakfast sausage
  • 1 tablespoon butter
  • 7 eggs, divided
  • 2 tablespoons milk
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 4 ounces Cabot Everything Bagel Cheddar Cheese, shredded
  • ¼ cup green onions, sliced
  • 2 tablespoons Everything Bagel seasoning

Instructions

  1. Preheat your oven to 425 degrees F. Line two baking sheets with parchment paper or a Silpat baking mat.
  2. In a medium pan, brown the breakfast sausage over medium heat until fully cooked. Drain any excess fat, then remove the sausage and place it on a paper towel-lined plate to absorb further grease.
  3. In a separate medium bowl, whisk together 6 of the eggs, milk, salt, and pepper until well combined. Reserve the remaining egg for the egg wash.
  4. Add 1 tablespoon of butter to the same pan you used for the sausage. Once melted, pour in the whisked egg mixture. Cook the eggs for approximately 3 minutes, stirring gently until they are still soft and slightly runny. Avoid overcooking, as they will bake further in the oven.
  5. Remove the pan from the heat and stir in the shredded Everything Bagel cheddar cheese until just melted and combined with the eggs.
  6. Gently fold in the cooked sausage and sliced green onions into the egg and cheese mixture.
  7. On a lightly floured surface, carefully roll out one puff pastry sheet into a 12 x 10-inch square. Using a sharp knife or pastry cutter, divide the square into 4 equal smaller squares. Repeat this process with the second puff pastry sheet.
  8. Spoon approximately ⅓ cup of the egg and sausage filling onto the center of each puff pastry square. Fold one corner of the puff pastry over the filling to meet the opposite corner, forming a triangle. Press the edges firmly to seal, then use a fork to crimp the edges completely, ensuring no filling leaks out during baking.
  9. In a small bowl, whisk the remaining egg with a tablespoon of water to create an egg wash.
  10. Brush the egg wash generously over the tops of each sealed breakfast pocket. This will give them a beautiful golden-brown color and help the seasoning adhere. Sprinkle liberally with Everything Bagel seasoning.
  11. Carefully transfer the breakfast pockets to the prepared baking sheets. Bake in the preheated oven for 15 to 18 minutes, or until the puff pastry is puffed, golden brown, and cooked through.

**Chef’s Note: You might have about ½ cup of extra filling leftover. Don’t let it go to waste! It’s perfect for adding to an omelet, a breakfast quesadilla, or simply enjoying as a quick skillet breakfast.
