Ingredients
- cooking spray
- 1 (14.4-oz.) box graham crackers, lightly crushed (Cinnamon graham crackers work wonderfully!)
- 1 cup plus 3 Tbsp. sugar, divided
- 1/4 cup Barlean’s Butter flavored coconut oil
- 3/8 teaspoon salt, divided
- 5 large egg whites, at room temperature, divided
- 1 large egg
- 12 ounces semi-sweet chocolate chips
- 1 1/2 cups heavy whipping cream
- 1 1/2 tablespoons butter
- 3/4 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 1/3 cup water
Instructions
- Preheat your oven to 350 degrees F (175°C). Lightly coat a 15 x 10-inch jelly roll pan with cooking spray to prevent sticking.
- For the Crust: Process graham crackers in a food processor until fine crumbs form. Transfer crumbs to a large bowl. Add 3 tablespoons of sugar, the butter-flavored coconut oil, 1/4 teaspoon of salt, 1 egg white, and the whole egg. Stir until thoroughly combined to form a cohesive mixture.
- Firmly press the crumb mixture evenly into the prepared jelly roll pan. Bake for 8 minutes, or until the crust is lightly golden brown. Remove from oven and allow to cool completely on a wire rack.
- For the Chocolate Ganache: Place the semi-sweet chocolate chips into a heat-proof bowl.
- In a liquid measuring cup, microwave the heavy whipping cream for approximately 2 minutes, or until hot and simmering (do not boil). Pour the hot cream over the chocolate chips and let sit undisturbed for 5 minutes. Add the 1 1/2 tablespoons of butter, then stir gently until the mixture is completely smooth and glossy. - With the mixer running at medium-low speed, gradually pour the hot sugar syrup in a thin, steady stream over the egg whites. Once all the syrup is incorporated, increase the mixer speed to high and continue beating until stiff, glossy peaks form and the meringue is cool to the touch (this may take 5-7 minutes).
- Spread the marshmallow meringue evenly over the chilled chocolate-graham crust. Place the pan on the middle rack of your oven. Broil for 1 1/2 minutes, or until the meringue topping is beautifully toasted and golden brown. Watch carefully as broilers vary!
- Remove from oven and let stand for 5 minutes before cutting into 28 squares. Serve immediately for the best warm, gooey experience!
