Conquering the Chaos: A Week of Waterpark Woes and Easter Prep
As Easter rapidly approaches, it’s hard to believe how quickly the days are flying by. Just last week, I found myself in a whirlwind, having seemingly lost an entire week to what I’ve affectionately dubbed “waterpark disease.” This wasn’t some exotic ailment, but rather the all-too-familiar post-waterpark sickness that seems to plague our family after every visit. It’s a tale of sniffles, coughs, and a whole lot of extra laundry, proving that sometimes, even the most fun getaways come with an unexpected aftermath.
It all began during Spring Break. My sister, her girlfriend, and I packed up the kids for an overnight adventure at a waterpark a few hours away. It was a blast – the kind of wild, splashy fun that makes memories. But the morning after we returned, a text from my sister asking if everyone was well immediately put me on alert. I confidently replied, “Yes,” only to have my words come back to haunt me a few hours later when my daughter began to feel ill. It’s uncanny how every single time we visit a waterpark, she’s the first one to succumb, almost as if she’s a canary in a coal mine, signaling the impending doom for the rest of us.

My role quickly shifts from vacation-goer to chief nurse and laundry specialist. With a husband who, bless his heart, is not exactly adept at handling bodily fluids, the task of sanitizing every sheet, towel, and piece of clothing falls squarely on my shoulders. And just as predictably as the sunrise, my husband usually follows, then our son, completing the cycle of “waterpark disease” through our household. This time was no different. The weekend saw one child sick, the beginning of the week brought down my husband and son, and by midweek, I too was battling the bug. It felt like a week-long battle against germs, and honestly, I barely remember it. The good news? We’re all back to full health now, and there are absolutely no plans for another waterpark adventure until next winter!
Emerging from the fog of sickness, my focus immediately shifted to Easter, a holiday my daughter has been eagerly anticipating since Valentine’s Day. She’s dreaming of egg hunts and proudly showing off the adorable dress and matching purse I found for her at Target. Meanwhile, this mama hasn’t even started shopping for Easter basket fillers! The thought of navigating crowded stores days before Easter, desperately hoping to find a chocolate bunny that hasn’t been snatched up, fills me with a unique kind of dread. I am generally not a last-minute person, so the anxiety is real, especially with my kids having two days off school this week. Usually, I rely on those precious 4-6 hours of solo shopping time – oh, the freedom! – but not this week. Add to that, my husband is away on a business trip, leaving me to juggle everything. It truly feels like chaos has descended!

What could be better than the classic combination of cheese and potatoes? Our Slow Cooker Hash Brown Casserole, a dish so simple and satisfying, it will quickly become a family favorite. Perfect for breakfast, an easy side dish, or a delightful Easter brunch, this recipe promises to please any crowd with its creamy, cheesy goodness and effortless preparation.
Ingredients
- 1 can (10.75 oz) cream of chicken soup (I used 98% fat free)
- 1 8-oz container sour cream (I used light)
- 16 ounces frozen, shredded hash brown potatoes
- 8 oz diced ham (optional, for added flavor)
- 8 oz sharp cheddar cheese, cubed or shredded
- ¼ cup yellow onion, finely chopped
- ¼ teaspoon black pepper
- 1 cup cornflakes, crushed
- 2 tablespoons butter, melted
Instructions
- Lightly spray the inside of your slow cooker with cooking spray to prevent sticking.
- In a large mixing bowl, combine the cream of chicken soup, sour cream, frozen hash brown potatoes, diced ham (if using), sharp cheddar cheese, chopped onion, and black pepper. Stir all ingredients thoroughly until well combined.
- Pour the mixture evenly into the prepared slow cooker. Cover and cook on low for 2 hours and 30 minutes.
- While the casserole is cooking, prepare the topping. In a small bowl, mix together the crushed cornflake cereal and melted butter. Toss gently until the cornflakes are evenly coated.
- After the initial cooking time, uncover the slow cooker and sprinkle the cornflake and butter mixture evenly over the top of the casserole.
- Re-cover and cook for an additional 30 minutes, or until the topping is golden brown and crispy, and the casserole is bubbly and heated through. Serve warm and enjoy!
