  • 1 (12-13 lb) whole turkey, giblets and neck removed
  • 1 tablespoon canola oil
  • 2 medium onions, coarsely chopped
  • 5 large carrots, chopped
  • 3 stalks celery, chopped
  • 2 bay leaves
  • 3 cups chicken stock

Instructions

  1. In a small saucepan, melt the butter over low heat. Add kosher salt, poultry seasoning, and crushed fennel seeds. Cook for 1 minute, stirring constantly to combine the flavors. Remove from heat and allow the mixture to cool completely until it thickens slightly.
  2. Remove the giblets and neck from the turkey cavity. Rinse the turkey thoroughly inside and out with cold water, then pat it completely dry with paper towels. This step is crucial for crispy skin.
  3. Carefully loosen the skin over the turkey breast and thighs, without completely detaching it. Reserve 1 tablespoon of the cooled herb butter rub. Spread the remaining butter mixture evenly under the loosened skin.
  4. Drizzle canola oil all over the outside of the turkey. Then, use the reserved tablespoon of herb butter to coat the entire exterior of the bird, ensuring an even layer of flavor.
  5. Remove the roasting rack from your roasting pan. In the bottom of the pan, arrange the coarsely chopped onions, carrots, and celery. Add the bay leaves and pour in the chicken stock. Replace the roasting rack.
  6. To ensure even cooking and a neat presentation, tuck the wing tips underneath the turkey’s body. Use kitchen twine to tie the ends of the turkey legs together.
  7. Place the prepared turkey onto the roasting rack in the pan. You can either allow it to sit at room temperature for at least 1 hour before cooking, or prepare it 12 to 24 hours in advance and store it in the refrigerator.*
  8. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  9. Bake the turkey in the preheated oven until a meat thermometer inserted into the thickest part of the thigh (without touching bone) registers 165 degrees Fahrenheit (74 degrees Celsius). For even browning, rotate the roasting pan after the first hour of cooking. If the skin begins to brown too quickly, loosely tent the turkey with aluminum foil.
