Smart Shopping Solutions at Walmart for Busy Families

When I head to Walmart, I make it a point to stock up on all our dinner time essentials while also picking up items for the upcoming holiday festivities. It’s truly a one-stop-shop experience that simplifies my life tremendously. And for those evenings when I’m truly pressed for time—think busy after-school activity nights or unexpected delays—Walmart’s online grocery pickup is an absolute lifesaver. I can conveniently shop for my groceries while watching gymnastics practice or during a short break, then simply pick them up without even stepping out of the car. It’s pure genius, especially when juggling a packed family schedule. If you haven’t tried it, I highly recommend you experience the convenience yourself here.

Holiday Flavors in a Weeknight Dish

One aspect I particularly adore about these Zucchini Stuffing Boats is how they cleverly incorporate ingredients that are a staple in my kitchen, especially during the holidays. We always have stuffing as a delicious side for both Thanksgiving and Christmas dinners, and cheese, in all its glorious forms, is a constant presence in our home. It’s truly a universal favorite.

Sweet potatoes are another reliable staple, offering both nutrition and a hint of sweetness to the stuffing. And while not directly part of the zucchini boats, my kids will never say no to a comforting side dish of Kraft Velveeta Shells & Cheese, especially when it’s generously topped with Oscar Mayer America’s Favorite Bacon, their naturally hardwood smoked and uncooked bacon. These familiar tastes bring a sense of comfort and tradition to our meals.

These Zucchini Stuffing Boats are a quick and simple dinnertime solution that’ll be on the table in under 30 minutes and that the whole family will love!

Ingredients

  • 4 medium zucchinis (hollowed out)
  • 1 box Kraft Stove Top Stuffing Mix, chicken flavored
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/2 cup yellow onion, finely diced
  • 1 medium sweet potato, peeled and diced (about 1/2 cup)
  • 2 celery ribs, diced
  • 1/4 cup dried cranberries
  • 1/4 cup chicken stock
  • 1/2 cup Kraft Shredded Sharp Cheddar Cheese

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175°C).
  2. Carefully halve the zucchinis lengthwise. Using a spoon, gently scrape out the insides, leaving approximately a 1/4 inch shell. Place the hollowed zucchini halves into a shallow baking dish.
  3. Prepare the Kraft Stove Top Stuffing Mix according to the package directions. Once prepared, set it aside.
  4. In a large sauté pan, heat the olive oil over medium heat. Add the minced garlic, diced onion, diced sweet potatoes, and diced celery. Cook these vegetables, stirring occasionally, until they begin to soften, which should take about 5 minutes.
  5. Stir in the chicken stock and dried cranberries to the sautéed vegetables. Continue to cook until all the liquid has been absorbed, approximately another 5 minutes.
  6. Combine the cooked vegetable mixture with the prepared stuffing mixture in a bowl. Mix thoroughly, then divide the stuffing mixture evenly among the hollowed-out zucchini halves.
  7. Generously top each stuffed zucchini boat with the Kraft Shredded Sharp Cheddar Cheese. Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
