This easy roast chicken offers incredible flavor with extra crispy skin, making it a perfectly simple and satisfying choice for a delightful Sunday dinner!
Ingredients
- 1 (5-6 pound) whole chicken
- 1 ½ tablespoons kosher salt
- 2 teaspoons black pepper
- 1 ½ teaspoons garlic powder
- 1 head garlic, halved
- 1 onion, quartered
- 1 bulb of fennel, quartered
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 3 celery stalks, cut into thirds
- ½ cup chicken stock
Instructions
- Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
- Rinse the whole chicken thoroughly under cold water and pat it completely dry with paper towels. In a small bowl, combine the kosher salt, black pepper, and garlic powder. Rub this seasoning mixture generously over the entire surface of the chicken, both inside and out. Stuff the cavity of the chicken with the halved garlic head, half of the quartered onion, half of the quartered fennel, fresh rosemary sprigs, and fresh thyme sprigs. Place the seasoned chicken into your roasting pan.
- Around the bottom of the roasting pan, scatter the remaining onion and fennel. Pour the ½ cup of chicken stock into the bottom of the pan as well. This will help create a flavorful base and keep the chicken moist.
- Place the roasting pan into the preheated oven. Roast the chicken until it is beautifully golden brown, and an instant-read thermometer inserted into the thickest part of the thigh (without touching the bone) reads 165 degrees F (74 degrees C). The juices should also run clear when the chicken is pierced. This typically takes about 1 hour and 30 minutes, but cooking times can vary based on your oven and the size of your chicken. Once cooked, remove the chicken from the oven and allow it to rest for at least 20 minutes before carving. This resting period is crucial for the juices to redistribute, ensuring a tender and moist final result.
