These ultimate Short Rib Sandwiches feature juicy, tender slow-cooked beef short ribs, elevated with El Yucateco® hot sauce and melty cheese, all served on soft bolillo rolls.
Ingredients
- 3.5 lbs beef short ribs
- kosher salt (for seasoning)
- 1 tablespoon olive oil
- 2 white onions, roughly chopped
- 3 garlic cloves, smashed
- 4 cups beef stock
- 1/4 cup El Yucateco® Red Habanero Hot Sauce
- 1 Tablespoon Worcestershire sauce
- 1 Tablespoon soy sauce
- 4 bolillo rolls
- 1 cup pepper jack cheese, shredded
- Banana peppers, El Yucateco® hot sauce (additional, if desired for serving)
Instructions
- Generously salt all sides of the beef short ribs. This step is crucial for building flavor from the start.
- In a large cast iron pan or heavy-bottomed skillet, set over medium-high heat, heat the olive oil until shimmering.
- Sear the short ribs on all sides until beautifully browned. This caramelization adds depth of flavor. If necessary, do this step in batches to avoid overcrowding the pan, ensuring a good sear rather than steaming.
- Place the browned short ribs into the bottom of your slow cooker. Add the chopped onions, smashed garlic, beef stock, El Yucateco® Red Habanero Hot Sauce, Worcestershire sauce, and soy sauce over the ribs.

- After 6 hours, carefully remove the short ribs from the slow cooker. Once they have cooled down enough to handle, remove the bones and shred the meat using two forks.
- Strain the cooking juices from the slow cooker into a separate bowl or fat separator, reserving approximately 2/3 cup of the flavorful liquid. Discard any excess fat.
- Return the shredded meat and the reserved juices back into the slow cooker. Set the slow cooker to a low or warm setting to keep the meat moist and hot until ready to serve.
- To assemble the sandwiches: Slice open the bolillo rolls. Pile a generous amount of the tender short rib meat onto each roll, top with shredded pepper jack cheese, a few banana peppers for a tangy crunch, and a drizzle of extra El Yucateco® hot sauce, if desired. Serve immediately and enjoy!
