Pumpkin Spice Latte Whoopie Pies take your favorite #PSL and transform it into soft, moist cake rounds, beautifully sandwiched together with a rich, creamy coffee buttercream. This is truly the best new way to enjoy all the delightful flavors of a pumpkin spice latte!
Ingredients
- 3 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 cups packed dark brown sugar
- 3/4 cup vegetable oil
- 1/4 cup butter, melted
- 2 3/4 cups canned pumpkin
- 2 Eggland’s Best eggs
- 1 1/2 teaspoons vanilla extract
Coffee Buttercream Filling
- 1 (8 oz) package cream cheese, at room temperature
- 1/2 cup (1 stick) butter, softened
- 4 cups powdered sugar
- 1 teaspoon coffee extract
Instructions
- Begin by preheating your oven to 350 degrees F (175 C). Lightly spray a whoopie pie pan** with cooking spray and set it aside, preparing it for your delicious batter.
- In a spacious large bowl, thoroughly combine all the dry ingredients: flour, ground cinnamon, baking powder, baking soda, salt, ground ginger, and ground cloves. Whisk them together until they are well integrated.
- In a separate large bowl, combine the wet ingredients. Beat together the packed dark brown sugar, vegetable oil, melted butter, canned pumpkin, Eggland’s Best eggs, and vanilla extract until the mixture is smooth and well blended.

Finally, add the coffee extract and beat the mixture on medium-high speed for another minute, until the buttercream is light, fluffy, and perfectly airy.
Assembly
- Once the pumpkin whoopie pie rounds are completely cooled, it’s time to assemble! Pipe or spoon a generous amount of the coffee buttercream onto the flat bottom of one whoopie pie round. Gently place another whoopie pie round on top, creating a delicious and inviting sandwich. Repeat with the remaining cake rounds and buttercream.
