Beyond Burgers: Discovering the Sweet Side of Grilling
My grill and I have forged an unbreakable bond, venturing far beyond the usual steaks and burgers. These days, it’s not uncommon to find us concocting everything from savory appetizers to surprisingly delightful desserts. While I might not claim true “grill master” status just yet, I’ve certainly honed my skills, always eager to experiment with new techniques and flavors over an open flame.
A few summers ago, I stumbled upon a truly amazing grilled treat: strawberry shortcake kabobs. Imagine tender pieces of angel food cake, skewered alongside plump, ripe strawberries, and then drizzled with sweetened condensed milk. As they cooked on the grill, the milk caramelized, creating a sticky, golden glaze that was pure summertime perfection. That experience opened my eyes to the incredible potential of grilled desserts, inspiring me to explore even more innovative sweet sensations.
This quest for grilled dessert excellence led me to a remarkable discovery: Chef Shamy Vanilla Bean Honey Butter. To be entirely honest, this butter has become a staple in my kitchen, finding its way onto everything from morning toast and bagels to, yes, even pound cake. I adore the visible flecks of fresh vanilla bean and the rich, sweet flavor it imparts, especially when used in desserts. It’s a game-changer, elevating simple ingredients with its gourmet touch.
And as fate would have it, this exquisite vanilla bean honey butter works absolutely brilliantly in this Grilled Strawberry Shortcake recipe, transforming it from a simple treat into something truly extraordinary.

The Heart of Summer: Embracing Cookouts and Fresh Produce
There’s something inherently joyful about summer cookouts. The air filled with laughter, the scent of grilling food, and a table laden with a delicious assortment of dishes – it’s a quintessential experience. I’m always the one piling my plate with a little bit of everything, savoring each bite, and inevitably, going back for seconds of my absolute favorites. And, of course, I always save room for dessert, which, let’s be honest, is often the highlight of the entire meal.
When summertime rolls around, and strawberries are at their peak, you’ll invariably find a clam shell (or two!) of these ruby red gems in my refrigerator. They’re an undeniable family favorite, and we make sure to keep them well-stocked throughout the season. Their natural sweetness and vibrant color make them perfect for a myriad of dishes, but especially for shortcake.

Crafting the Perfect Foundation: Pound Cake on the Grill
Even with the best intentions, sometimes those beautiful strawberries can sit in the fridge a little longer than planned. That’s when a quick sprinkle of sugar and a few hours of maceration magically transform them into the most incredible topping for strawberry shortcake. This simple step draws out their juices, intensifying their flavor and creating a luscious, sweet syrup that’s simply irresistible.
When it comes to the cake component of shortcake, many people reach for angel food cake or classic biscuits. While I adore both, and have even successfully grilled angel food cake in the past, for this specific recipe, I wanted something with a bit more substance and resilience. That’s why I opted for thick slices of hearty pound cake. Its dense yet tender crumb holds up beautifully to the heat of the grill, allowing it to develop a fantastic golden-brown crust without falling apart.
The grilling process itself is wonderfully simple but requires your full attention. Once you’ve generously spread Chef Shamy Vanilla Bean Honey Butter on one side of each pound cake slice, gently place them directly onto a preheated grill. This is not the time to wander off! Keep a close eye on them, as it takes just about a minute per side to achieve those coveted, appetizing grill marks and a perfectly golden-brown finish. The butter melts and caramelizes, infusing the cake with incredible flavor and a delightful, slightly crispy texture.
This Grilled Strawberry Shortcake is sweet, slightly crunchy and the perfect way to end a summer day.
