Why This Turkey Pot Pie Slab Pizza Will Become Your Go-To Leftover Recipe
The holiday season, especially around Thanksgiving, often brings with it a delightful challenge: what to do with all that delicious leftover turkey? While the thought of another plain plate might not excite everyone, this Turkey Pot Pie Slab Pizza is designed to reignite excitement for post-holiday meals. It’s not just a recipe; it’s a culinary transformation that turns familiar flavors into an entirely new and exciting dish. Here’s why this recipe deserves a permanent spot in your holiday rotation:
Firstly, it’s an incredible way to utilize not just your leftover turkey, but also any extra vegetables and cheeses from your holiday spread. Think about that half-used block of cranberry white cheddar from the cheese board or those leftover cooked carrots and peas from the side dishes. This recipe embraces them all, minimizing waste and maximizing flavor. It’s a resourceful and delicious approach to ensuring every last bit of your Thanksgiving meal is savored.
Secondly, this slab pizza is a game-changer for entertaining. The days following Thanksgiving are often filled with continued festivities, whether it’s hosting family for an extended visit or gathering friends for a lively game day celebration. A large slab pizza is inherently designed to feed a crowd with minimal fuss. You can slice it into generous squares, making it easy for everyone to grab a piece. No one will suspect they’re eating “leftovers” when presented with this hearty, cheesy, and flavor-packed pizza. It’s the ultimate comfort food, perfect for casual get-togethers where delicious, easy-to-eat fare is key.
Finally, the sheer delight of its flavor profile is unmatched. This isn’t just a turkey pizza; it’s a *pot pie* pizza. The rich, creamy white cheddar sauce mimics the luscious gravy of a traditional pot pie, while the combination of tender turkey and vibrant vegetables brings that classic comfort food taste to the forefront. When nestled on a crispy pizza crust and topped with a blend of melted cheeses, it creates a symphony of textures and tastes that is truly irresistible. It’s a win-win for everyone: you clear out refrigerator space, and your guests or family get to enjoy a truly memorable and delicious meal.

The Simplicity of Crafting Your Turkey Pot Pie Pizza
One of the most appealing aspects of this Turkey Pot Pie Slab Pizza is its remarkable ease of preparation, especially during the busy holiday season when time is often at a premium. After the marathon of Thanksgiving cooking, the last thing anyone wants is a complicated recipe. This dish comes together quickly, allowing you to enjoy Black Friday deals or simply relax with loved ones without spending hours in the kitchen.
The primary ingredient you might need to specifically purchase for this recipe is pizza dough. Whether you prefer the convenience of store-bought crusts or the satisfaction of making your own from scratch, the choice is yours. Beyond that, most ingredients will likely be staples from your Thanksgiving meal or readily available in your pantry. This thoughtful design means less grocery shopping and more time enjoying the festive spirit.

To begin, I recommend using two packages of pre-made pizza dough, which are conveniently rolled out onto a 12 x 17-inch jelly roll pan. This creates a generous base, perfect for a slab-style pizza that can feed many. The magic truly begins with the sauce: a quick, homemade white cheddar roux. This creamy, savory sauce acts as the “pot pie filling” that ties all the other ingredients together, providing that signature rich flavor without the need for a traditional pie crust.
Once the base and sauce are ready, it’s all about layering on your Thanksgiving leftovers. A classic mixed vegetable medley – think corn, carrots, peas, and green beans – is ideal for capturing that pot pie essence. Generous amounts of shredded turkey follow, ensuring every slice is packed with flavor. Finally, a harmonious blend of cheeses takes center stage. I love using shredded Swiss for its nutty notes and, for an unexpected twist, some cranberry white cheddar. The cranberry adds a delightful punch of sweet-tart flavor that brightens the entire dish, and it’s often a leftover from holiday cheese boards! A final sprinkle of fresh thyme enhances the aromatic profile, bringing all the comforting flavors together.

The Secret to Extraordinary Flavor: Quality Turkey Makes a Difference
The foundation of any exceptional turkey dish, especially one as comforting as our Turkey Pot Pie Slab Pizza, starts with the quality of the bird itself. For years, our family’s preferred choice for Thanksgiving and beyond has been Honeysuckle White Whole Turkey. Their unwavering commitment to high standards and respect for animal welfare truly sets them apart, aligning perfectly with our values when selecting poultry.
Honeysuckle White turkeys are raised free from growth-promoting antibiotics and preservatives, and they are USDA process certified. This dedication to natural, wholesome practices translates directly into a bird that is not only tender and juicy but also packed with superior flavor. A well-cooked Honeysuckle White turkey, with its golden-brown skin and succulent meat, provides the perfect base for your Thanksgiving meal and, importantly, yields the most delicious leftovers for recipes like this slab pizza and our other favorites.
Choosing a high-quality turkey means that your shredded turkey in the pizza will be flavorful and moist, absorbing the creamy roux sauce beautifully and contributing a rich, satisfying element to every bite. This attention to sourcing makes a noticeable difference in the final taste and texture of your leftover creations.
